Fritters, muffins and rolls, oh my! This week’s blog post shares three of our favourite Kidgredients recipes that feature one of our favourite veggies: zucchini. Plus, they all take just five minutes to prepare and 20 minutes to cook – winner!

We love simple lunchbox recipes that the kids absolutely love – which is probably why we love Kylie from Kidgredients so much.

But we also love veggies that we can easily sneak into those recipes to get an extra serve of nutrition into our kids’ daily diet with minimal fuss. For us, zucchini is one of the best.

With an unoffensive taste and appealing texture, zucchini is one of the best veggies to throw into just about any savoury (or even sweet!) meal, snack or treat you’re cooking up. Plus, it’s chock-full of important nutrients that your kids may not get a tonne of otherwise.

Zucchini is reported to have a very high vitamin C content, which can not only prevent deficiency issues like scurvy, sclerosis and easy bruising, but is also said to help with your eyesight. It’s also got protein, fibre and good, healthy carbohydrates, as well as potassium, folate and vitamin A. Basically, all the good stuff.
